Ingredients
2 cups basmati rice, rinsed and soaked for 30 mins
4 cups water
1 teaspoon salt
1 cup fresh parsley, finely chopped
1 cup fresh cilantro, finely chopped
1 cup fresh dill, finely chopped
1/2 cup chives or green onions, finely chopped
1/2 teaspoon dried fenugreek leaves (optional, adds depth)
2 tablespoons olive oil
Directions
Cook the Rice:
- Bring 4 cups of water to a boil, add salt and the rinsed rice.
- Cook for 5-6 minutes until slightly soft but still firm.
- Drain and rinse with cool water.
Steam with Herbs:
- In a large pot, heat olive oil over medium heat.
- Add the drained rice and gently fold in the chopped herbs.
- Cover with a lid wrapped in a clean towel (to absorb moisture) and steam on low heat for 20-25 minutes until fluffy.
Serve & Enjoy:
- Fluff the rice with a fork and serve with grilled vegetables, yogurt, or your favorite protein.
